Healthy Mediterranean Cooking
Course Description
This course is inspired by the dietary patterns of the costal regions of southern Italy and Crete in the 1960's. It is not typical of all Mediterranean cooking and is the eating style that is cited and recommended by health professionals today for its many health benefits. Emphasis is placed on abundant plant foods, olive oil, fish, legumes, fruit for dessert and moderate amounts of dairy, primarily cheese and yogurt. A key component is the leisurely enjoyment of real, whole foods. This course includes class discussion of the health benefits by a nutrition professional followed by hands-on cooking.
